Healthy Flourless Banana Bread

If there's one thing that I've learnt about bananas, it is that they are one of the most versatile ingredients. Their carb content and naturally sweet taste make them a perfectly healthy alternative to baking recipes! Take my Banana Protein Pancakes as an example! Using these as inspiration, I figured there must be a way to make banana bread without flour... so I experimented a little and the delicious loaf above was created :)


The recipe is super easy and simple, and only uses no frills ingredients. It is also deliciously healthy as there is no added sugar - the sweetness comes from the bananas, vanilla extract and maple syrup - all of which are healthier alternatives.


Give it a go and enjoy! I would high recommend serving with a spread of peanut butter and a drizzle of honey - it is perfection!

INGREDIENTS:

  1. 3 ripe bananas

  2. 2 cups rolled oats

  3. 2 eggs

  4. 1 tsp baking powder

  5. 1 tsp vanilla extract

  6. 1/4 cup maple syrup

  7. 1/4 cup seed mix (pumpkin, sunflower etc)

  8. 1/4 cup chia seeds


RECIPE:

  1. Add all of the ingredients apart from he seed mix and chia seeds to a blender and blend thoroughly until everything is combined into a thick batter.

  2. Empty into a mixing bowl and stir in the seed mix and chia seeds until they are mixed in well.

  3. Lightly grease a 9x5-inch loaf tin or a similar size baking tray. You can also line with greaseproof paper first and grease this lightly.

  4. Pour the batter into the tin/tray and spread out evenly.

  5. Bake for 35-45 minutes - you can check if it is cooked by poking through a cocktail stick.


NOTE: Banana bread does crack so don't be alarmed. You can try and avoid it being too much by scoring the laid out batter slightly before you place it in the oven.
