Paprika Chicken & Halloumi Lettuce Wraps

Chicken + Halloumi = what's not to love?! Top with some sweet pomegranate and you will be loving every bite!
IT'S QUICK. IT'S SIMPLE. IT'S LOW CARB. AND IT'S DELICIOUS.
Inspired by appetisers found at Asian restaurants, this version is perfect for throwing together as a starter, sharing platter, or even for your lunch box! Using minimal ingredients and just a fraction of your time, you can go and enjoy the finer things in life :)
INGREDIENTS (makes 6):
6 lettuce leaves, washed
6 mini chicken breast fillets, washed and drained
225g block of light halloumi
80 pomegranate seeds
1 tbsp rapeseed oil
1/2 tsp salt
1/2 tsp coriander cumin powder
1 tsp hot paprika
1/2 tsp cayenne pepper
METHOD:
Heat oil in a non stick frying pan. Meanwhile, drain the halloumi block and lightly pat dry with a paper towel. Cut into 6 equal slices and leave to one side.
Add the chicken breast fillets into the hot oil and sprinkle on all of the seasoning mentioned above. Mix until evenly coated then leave to cook on medium-high heat. Ensure to keep turning the fillets so they don't get crispy on one side.
Once the chicken has cooked, remove from the pan transfer to some foil to keep warm. In the same pan, add the halloumi slices and cook these on medium heat for a few minutes until they're golden - keep turning so they don't burn on one side. Remove from the pan.
Lay out the lettuce leaves and place one chicken breast fillet and one halloumi slice per leaf. Top with a sprinkling of pomegranate seeds and enjoy!
You can always add some hot sauce, guacamole or salsa if you wish for extra flavour!
