Banana Protein Pancakes

Who doesn't love pancakes for breakfast?!
I was looking for a flourless recipe that uses protein powder and came across a decent one which I decided to tweak a little and came up with this one! These are honestly so delicious, as well as light and fluffy, with the added bonus of giving you 1 of your 5 a day as well as a good amount of protein! Plus, the sweetness from the vanilla protein powder and banana combined is enough if you're watching your sugar intake!
The ones I made above have been topped with banana, honey and chia seeds, however you can top with whatever you fancy - I had some more one day with greek yoghurt and strawberries and they were yummy!
INGREDIENTS (makes approx 4 pancakes):
1 banana (the riper the better)
2 eggs
1 scoop vanilla protein powder
1/4 tsp ground sweet cinnamon
pinch of salt
1/8 teaspoon baking soda
coconut oil
RECIPE:
Separate the egg white from the egg yolk.
Beat the egg whites until they start to form a peak.
Put in your banana, ground sweet cinnamon, salt, protein powder and baking soda into your egg yolk and beat into a smooth mixture.
Heat 1/2 tsp of coconut oil in a pan until the pan is hot, and in the meantime, slowly pour the egg white into your mixture of other ingredients and fold in with a spatula (do not beat).
Pour quarter the mixture onto the pan forming a round pancake. Cook for about 60-90 seconds in each side.
Repeat with the rest of the mixture then top with what you fancy and enjoy!
