Vegetable Rice

Here's a quick and easy way to spice up your rice!


Sometimes plain rice just doesn't cut it, particularly with grilled meats and fish. So this recipe is the perfect companion for your dinner plate!



INGREDIENTS (serves 2-3):

  • 150g brown basmati rice

  • 1 @knorruk vegetable stock cube dissolved in 400ml boiling water

  • 1/3 tsp salt

  • 1/4 tsp turmeric

  • 1 tsp minced ginger

  • 1 tsp minced garlic

  • 1 tsp minced chilli (adjust according to desired spice level)

  • 1/2 cup frozen peas

  • 1/2 cup diced carrot


METHOD:

  1. In a large pan, clean the rice by washing under warm water until the water becomes clear.

  2. Add in the boiling stock cube water and place on hob on low-medium heat.

  3. Add in the rest of the ingredients and stir with mix. Half cover the pan with a lid and leave to boil for approx 15 mins or until majority of the water has evaporated and the rice is cooked - keep checking ever few minutes.

  4. When it is at a "soggy" mixture stage, gently stir to prevent it from sticking then cover completely and allow it to finish cooking on low heat for about 3 mins - stirrinc occasionally.

  5. Remove from heat and allow to stand for 5 mins covered. Fluff with a fork before serving.
