Tuna Mayo Jacket

We all know tuna and sweetcorn mayo is delicious in a jacket potato, but have you ever tried it in a sweet potato? It is DELICIOUS.


FUN FACT: Not only is tuna rich in omega 3, it is also a great source of protein and low in fat!


I like to add some extra ingredients to mine to give it more flavour (and colour!) so here's how I make it... It is super simple and easy:


INGREDIENTS (makes 2 servings):

  • 112g drained tuna chunks

  • 4 tbsp mayonnaise

  • 1 1/2 tsp dijon mustard

  • 4 tsp tinned sweetcorn

  • 1/2 sweet pointed red pepper, chopped into small squares

  • 1 large sweet potato


METHOD:

  1. Cook the sweet potato in the oven on 200 degrees (180 degrees fan) for 1 hour.

  2. When there's 10 minutes left on the potato you can make your tuna salad: add all the ingredients to a bowl and mix well.

  3. Remove the jacket from the oven and allow to cool for 5 minutes. Cut through the middle to create a deep pocket/opening and top with half of the tuna salad.

  4. Serve and enjoy! You can store the other half of the tuna in the fridge for up to 2 days.

Optional - you can top with cheese which is also super delicious!!
