Tuna Mayo Courgette Boats

You’re probably used to having tuna mayo in a jacket, but ever tried it in a courgette boat? Courgettes are a fantastic vegetable because they’re super low in calories and practically tasteless so make a great base for a flavourful filling! Plus, they cook much quicker than a potato so there’s less waiting around for your meal, and this tastes delicious hot or cold.
INGREDIENTS:
1 large courgette
112g drained tuna chunks
3 tbsp mayonnaise
1 tsp dijon mustard
4 tsp tinned sweetcorn
METHOD:
Preheat the oven to 200 degrees (180 degree fan).
Slice the courgette in half lengthways then use a tablespoon to scoop out the centre flesh from each half to create a ‘boat’.
Place the courgette slices on a baking tray with the scooped out sides facing up and bake for 10-15 minutes.
In the meantime, make your tuna mayo by mixing together the remaining ingredients in a bowl.
Once the courgette slices are cooked, remove from the oven and allow them to cool for 3-5 minutes before filling with your tuna mayo and serving!
