Tikkhi Flatbread Rotis

Here is a spicy twist on my original Healthy Flatbread Rotis which you can enjoy with curries, humous or even as a small wrap. They're deliciously soft and have a subtle spice to them so if you just want a little kick but prefer not to put chilli in your main dish, then these are perfect to pair with it!


INGREDIENTS:

  • 1 cup wholemeal flour

  • 2/3 cup 0% fat greek yoghurt

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp turmeric

  • 1/2 tsp coriander cumin powder

  • 2 tbsp chopped parsley or coriander

  • 1/2 tbsp ginger, minced or grated

  • 1/4 tbsp green chilli, minced or finely chopped


METHOD:

  1. Combine all ingredients except for the yoghurt in a large mixing bowl until evenly mixed together.

  2. Add a tbsp yogurt at a time, mixing to form a smooth dough. Wrap in cling film and leave to rest for 30mins-1hr.

  3. Divide the dough into six equal balls.

  4. Heat a large nonstick tawa (skillet) over medium-high heat. Using a rolling pin, roll out each dough ball into a round chapati until it's about 6 inches in diameter (dust the dough and work surface with flour as needed).

  5. Transfer the flatbread to the tawa (skillet) one piece at a time, cooking for 1-2 mins per side, flipping to the second side when you start to see the dough rise. You may need to flip it a couple of times to get the perfect rise without burning it. Repeat with the remaining dough balls.

  6. Serve immediately or let cool, wrap in two layers of plastic and freeze for up to 3 months.
