Sweet Chilli Paneer

Paneer is a soft non-melting cheese which is common in the Indian subcontinent. It is known mostly for being the star of Chilli Paneer which is a super popular dish in Indian and Indo-Chinese cuisines. Although it is a type of cheese, it doesn't have a rich cheesy taste - think Mozzarella dialled down. In fact it is probably closer to the taste and texture of tofu than cheese, that is why we can create whole recipes from it!


There are so many different variations of Chilli Paneer, but this one has got to be one of my favourites. If you're a fan of sweet chilli sauce, you will love this! This dish has a delicious kick with a hint of sweetness which pairs perfectly with the subtle taste of the paneer. It is quick and easy to make and serves as a perfect starter before curry night.


It is definitely one on the spicy side so if you're not a fan of heat you can skip the green chillies and try it that way :)


INGREDIENTS:

  • 250g paneer - cut into 1-2cm cubes

  • 1 sweet pointed red pepper - quartered long ways and cut into 2cm slices

  • 1 red onion - finely sliced

  • 1/3 tsp green chilli - finely chopped

  • 1/2 tsp garlic - finely chopped

  • 1/2 tsp ginger - finely chopped

  • 1/3 tsp salt

  • 1/3 tsp turmeric

  • 1 tbsp soy sauce

  • 1/3 cup sweet chilli sauce

  • 2 tbsp passata

  • 1 tsp coconut or rapeseed oil

  • fresh coriander to top with


METHOD:

  1. In a wok, heat the oil on high heat until it is hot, then add in the paneer and sizzle the cubes until they begin to crisp on the outside - keep turning them to ensure as many sides as possible are grilled. Once they are all cooked as much as possible, empty into a bowl and leave to one side.

  2. In the same wok on medium-high heat, add in the garlic, ginger and green chillies if you are using and sizzle these for about 30 seconds then toss in the red pepper and onions. Lower to a medium head and cook these for a couple of minutes until they start to soften.

  3. Add in the cooked paneer along with the salt and turmeric then mix well.

  4. Next add in the chilli sauce, passata and soy sauce and stir.

  5. Allow to cook for about 5 minutes, stirring occasionally, then do a quick taste test to check the salt level. You can add in a bit more if you like it more salty.

  6. Sprinkle on the fresh coriander and serve!
