Sooo many of my recipes rely on 3 ingredients: Garlic, Ginger, Chilli. But it gets tedious having to finely chop them Every. Single Time! šŸ˜“ & if you don't want to be chewing on a surprise piece of ginger or burning your mouth on a chilli then finely chopped just isn't enough! šŸ¤·ā€ā™€ļø

The freezer is honestly a life saver when it comes to batch-anything! Whenever I have some time I bulk buy chillies, garlic & ginger to grind & store in the freezer for instant access. āœ… All you have to do is let the packs thaw for a few minutes every time you want to use some so they're easily breakable!ā € šŸ’” Here's some tips on how to prep each one:ā €

Ginger ā € Remove skin, wash then leave to dry on a towel a few hours - last thing you want is watery ginger! Cut into smallish chunks, throw into a food chopper and grind until there's no chunks left!ā €

Garlicā € Remove the skin then throw into a food chopper & grind! DO NOT wash as contact with water turns garlic green! (TIP: to get rid of the garlicky smell from your fingers, rub them on a stainless steel utensil i.e. a teaspoon whilst running your hands under the tap)ā €

Chiliesā € Remove the stalks, wash, then leave to dry. Chop into thirds or quarters, throw into a food processor & grind (when you open the lid try not to speak because the smell of the chillies will make you cough, trust me!)ā € NOTE: If you're doing all 3 at the same time, grind in this order: ginger, garlic, chilli. This way there's no need to wash the food processor in between as the flavours won't be affected!ā €

I then like to pack them into sandwich bags & flatten to about 2-3mm thickness. This way, they're easy to break when frozen. You can make a couple of bags of each & store in the freezer to keep you going!ā € I hope you found this helpful & it makes your life a little bit simpler so you can spend more time cooking and less time prepping! šŸ¤—šŸ˜Šā €
