Sauteéd Cinnamon Apples

So I've been using @oddboxldn for a few months now and it's honestly such a fabulous way to get in your fruit and veg, discover new ingredients to work with, and help keep the planet healthy at the same time! Plus, you get so much of one item - it's amazing value for money!


I'd received a bunch of apples in my recent box which was great, but due to the fact that apple skins make my throat itch, I tend not to snack on them as is. And de-skinning each time is just too much effort!


The solution was to sautee them all and keep in the fridge for up to a week - that way I can enjoy them in several wonderfully sweet ways!

Here I have topped on a bowl of porridge and drizzled on some peanut butter & chia seeds... The outcome = a heavenly breakfast bowl that tastes like warm apple pie...


INGREDIENTS:

  • 5 apples, skin peeled and cubed

  • 4 tbsp water

  • 2 tbsp coconut oil

  • 2 tbsp honey (or maple syrup)

  • 1 tsp ground cinnamon

  • 1/4 tsp salt

  • 1/2 tsp vanilla extract


METHOD:

  1. Add water into pan followed by apples. Cover and cook on medium heat for 5 mins, stirring occasionally until water is absorbed.

  2. Add oil and stir to coat. Cover and cook for further 5 mins until apples become soft.

  3. Add honey, cinnamon, salt and vanilla. Mix well then cover and cook for another 5 mins until apples reach your desired softness.

  4. Remove from heat and serve! Store excess in an airtight container in the fridge for up to 1 week.
