Protein Prawn Hakka Noodles

Noodles are delicious! You can literally toss whatever you want into the pan with them. But the thing I struggled with when trying a keto diet was cutting these out because of the carb intake. Now those of you who aren't counting their carbs are welcome to use whichever noodles you prefer, but this post is particularly for those who are counting.


I found these Oomi protein noodles (https://www.oominoodles.com/), which can be found in any supermarket, and I was a bit skeptical at first... noodles made out of fish - WHAT?... but they are honestly so delicious and filling you can't even tell the difference!


The below recipe is so simple and uses Ching's Chowmein Hakka Noodles Masala which can be found in almost any indian grocery store. The flavour in this powder is incredible and you don't need to add any other herbs or spices to it! If you're a fan of spice you will love this!


INGREDIENTS for 2 servings:

  • Oomi noodles snap pack (230g)

  • 150g king prawns

  • 150g mangetout - each one halved

  • 175 baby sweetcorn - chopped into finger thick slices

  • 1 tsp Ching's Chowmein Hakka Noodles Masala

  • 1 tsp coconut oil


RECIPE:

  1. In a non stick wok or pan, heat the coconut oil, then add in the king prawns and allow them to cook slightly (about half the time given on the packet), constantly stirring to avoid anything sticking.

  2. Toss in the mangetout and baby sweetcorn and mix in well, then allow everything to cook fully for a few minutes (take care not to make the mangetout too crispy).

  3. Add in the the Ching's Chowmein Hakka Noodles Masala and mix in well with the prawns and veg.

  4. Finally, add in the noodles and mix well until all of the veg has been mixed in evenly and the noodles are coated.

  5. Serve hot and enjoy!
