Protein Banana Cake Bites

These have honestly got to be one of the most delicious banana recipes I have made to date! They’re the right combination of soft, fluffy and moist with the perfect density and a yummy crust at the top.

Taking inspiration from Cookie & Kate's Healthy Banana Muffins recipe, these squares are perfect as an afternoon snack or even a post breakfast bite! 

They’re made using wholemeal flour for a healthier take on a traditional banana bread recipe, and you can skip the sugar if you want to keep it naturally sweet. 


INGREDIENTS:

  • 1/3 cup melted coconut oil

  • ½ cup maple syrup

  • 2 eggs

  • 3 ripe bananas (mashed)

  • ¼ cup @rudehealth almond milk (or any other milk of choice)

  • 1 tsp baking powder

  • 1 scoop vanilla protein powder

  • ½ tsp salt

  • ½ tsp cinnamon

  • 1 ¾ cups wholemeal flour 

  • 1/3 cup wholegrain rolled oats, plus extra for sprinkling on top

  • 1 tsp muscovado sugar

METHOD:

  1. Preheat the oven to 165 degrees, and grease the inside of the baking tray – you will need a square tray approx 8”x8”.

  2. In a large mixing bowl, beat the coconut oil and maple syrup together with a whisk until combined, then add in the eggs and beat well. Then mix in the mashed banana and milk, followed by the baking powder, vanilla protein powder, salt, cinnamon and sugar. Continue to mix with the whisk until well combined.

  3. Next add in the flour and oats and mix until combined with a large wooden spoon (I find a flat one works better). 

  4. Lay out the mixture in the greased baking tray, shaking it gently to even it out, then sprinkle some oats on the top.

  5. Bake for about 20-22 minutes – you can check if it is done by inserting a cocktail stick or small knife into the middle and if it comes out clean it is cooked.

  6. Remove from the oven and leave the tray on a cooling rack for about 10 minutes to cool, then using a thin spatula, loosen the edges and remove from the tray and leave to cool for a bit longer on the cooling rack.

  7. Cut into 16 squares and enjoy!
