Prawn Linguine

Linguine has got to be one of my favourite ever pasta dishes. Pair that with my all fave which is seafood, and this dish has my mouth watering every time I think about it!
I wanted to create a simple and easy version that can be made at home with ingredients already available your store cupboard, and this is what I came up with! It is really delicious and have a lovely kick to it (obviously), and the challenge was to get a good consistency without putting in too much tomato sauce or oil as I wanted to keep it healthy too.
HERE ARE SOME OF MY TIPS:
Put the boiled linguine pasta in the sauce IMMEDIATELY after draining. If you allow it to sit, the starch will dry up and they will stick together, which means you will lose that lovely slipperiness of the linguine.
Add in the water bit by bit until you are happy with the consistency as it evaporates as you cook. I've given a rough measurement but don't put it all in at once!
Serve immediately after mixing so the sauce doesn't dry out from the heat.

INGREDIENTS (serves 2):
150g of uncooked linguine pasta
180g cooked and peeled jumbo king prawns
200 - 230g passata
1/2 cup water
1 tsp salt
1/3 tsp cayenne pepper
3 birds eye chillies - deseeded and chopped (adjust according to how spicy you want it)
3 cloves garlic - chopped
1/2 tsp dried basil OR dried mixed herbs
1 tsp coconut oil
grated parmesan - to serve
METHOD:
Place your linguine to boil - they usually take about 7-9 minutes to cook
In the meantime, heat up the oil in a separate large pan then on a medium heat, add in the garlic and chilli and sizzle for 30 second.
Add in the cooked and peeled prawns and sizzle for another 1-2 minutes.
Sprinkle the salt, herbs and cayenne pepper and mix well.
Add in the passata and stir until combined, then add in half of the water bit by bit until your sauce is the consistency you desire - it should be slightly watery but still thick enough as a pasta sauce.
Drain the pasta and immediately add into the sauce. Lower the heat and stir gently until fully combined and completely heated through. If you feel like you need to add more of the water then go ahead and do so bit by bit until you feel the dish is "moist" enough.
Serve in a pasta dish and top with some grated parmesan for extra yumminess!
