Peanut Butter-Oat & Choc Chip Energy Balls

These peanut butter and dark chocolate chip protein balls are AMAZEBALLS (pun intended). They are so easy to make and a great snack for any time of the day, especially for those of you like me who have a sweet tooth! And the best thing about them is that not only are they super filling, they are super healthy too!
Convinced? Good! All you need are the below ingredients and a bit of arm muscle!
INGREDIENTS
2 cups of rolled oats (use gluten free oats if you need to)
1 cup natural peanut butter (or other nut butter i.e. cashew butter)
1/2 cup honey
1/4 cup dark chocolate chips (or you can use white/milk chocolate chips, dried fruit or raisins)
1/4 cup unsweetened shredded coconut (or chopped nuts)
RECIPE
In a mixing bowl, combine all of the ingredients and mix well with a spatula. Using a tablespoon as a measure, roll the mixture into balls (approximately the size of ping pong balls.)
Store in an airtight container in the fridge for up to 5 days, or in the freezer for up to 3 months. If you're going to store them in the freezer it may be worth wrapping them individually in cling film you can just defrost how many you want to each time.
