Peanut Butter French Toast

What’s your favourite way to enjoy French toast?
Mine has got to be this!
I present to you this delicious combo of French toast (or eggy bread as I like to call it!), topped with peanut butter, bananas, blueberries, honey and a sprinkling of sunflower and pumpkin seeds for added nutrition!
Some of you may be wondering… hmm peanut butter with French toast? Are you sure?? But trust me, it is actually a very yummy combo! You literally have so many flavours going on, it’s an absolute delight! And of course with all of the good fats, natural sugars and protein, it is the perfect way to start the day.

INGREDIENTS:
1 large egg
2 slices small wholemeal bread
1 tbsp @pipandnut smooth peanut butter
1/2 medium banana - sliced
Small handful of blueberries
1 tsp @rowsehoneyuk light & mild honey
Sprinkle of sunflower & pumpkin seeds (optional)
1/2 tsp coconut oil
METHOD:
Heat the oil in a frying pan and beat the egg in a bowl/pasta plate large enough to fit in a slice of bread.
Cut he slices of bread into triangles then dip them in the beaten egg, coating all sides evenly.
Place the slices on the heated frying pan and cook on each side for 1-2 minutes.
Serve in a plate and top with a generous spread of peanut butter, followed by the sliced bananas, blueberries, a drizzle of honey and a sprinkling of mixed seeds.
