Parmesan Aubergine Slices

Aubergine is another versatile vegetable so no wonder it works as a great base for a simple meal. Also due to the minimal taste it is, you can really taste the nuttiness to the Parmesan in this!
This is a super simple, tasty and healthy recipe. You can enjoy it on its own, as a side dish or paired with rice, veggies, or even halloumi to make it super cheesy!
INGREDIENTS:
1 large aubergine
dried mixed herbs
salt
black pepper
grated parmesan
METHOD:
Preheat the oven to 200 degrees (180 degrees fan).
Slice the aubergine into finger thick slices and lay out onto a baking tray.
Top with a sprinkle of salt, pepper and dried mixed herbs then finish with a generous sprinkling of parmesan.
Place in the oven and bake for 15 minutes until the aubergine becomes soft.
