Oat Pizza Base

Your pizza nights are sorted with this recipe! Using only 4 ingredients to create the base, you won’t believe how tasty it actually is! I prefer my pizza bases to be thin and crispy because I’m all about the toppings over the dough (plus it reduces my carb intake that usually bloats me). The addition of oats is EVERYTHING in this – not only does it give it a better taste, the crust becomes like a yummy oat cracker (this coming from someone who always leaves the crust). If you want to go the extra mile, you can collect the crusts and have them as a snack at the end by dipping them into some hummus or guacamole or salsa!
INGREDIENTS:
75g wholegrain rolled oats
75g self raising flour
80ml semi skimmed milk (or other milk of your choice)
30g margarine
2-3 tbsp tomato puree
+ whatever toppings you want including grated cheese (I recommend mozzarella)
METHOD:
Preheat the oven to 200 degrees celcius.
In a large mixing bowl, sieve the self raising flour. In a food processor, grind the oats until they become like a powder/flour then add these to the bowl.
Add in the margarine and using your hands, mix into the flour until it starts to form breadcrumbs.
Next, slowly add the milk in bit by bit and knead the mixture into a dough.
Flour the work surface and place the dough in the middle and start to roll it out using a large rolling pin to create approximately a 1cm thick base.
Grease a pizza tray and place the pizza base on it. If you don’t have one you can place a sheet of greased foil on one of the oven shelves and put the base onto there.
Bake the base in the oven for 8-10 minutes then remove and leave the oven on.
Now it’s time to make your pizza! Spread on the tomato puree then follow with your toppings.
Pop the completed pizza back in the oven and cook for 5-8 minutes.
