Lemon & Herb Salmon

What is it about salmon that just makes it such a tasty fish?! I love the fact that it barely needs any seasoning and is done in under 30 minutes – prep included! This is my go to way of seasoning salmon and is delicious every time! I serve it with steamed veggies, tenderstem, asparagus, rice or quinoa depending on my mood or how hungry I am. 

INGREDIENTS (serves 3):

  • 3 salmon fillets

  • 1 ½ tsp dried mixed herbs

  • ½ lemon

  • 1 tsp salt

METHOD:

  1. Preheat the oven to 180 degrees celcius.

  2. In a oven tray, lay down some foil shiny side up and grease before placing on thesalmon fillets.

  3. Season each fillet evenly with the dried mixed herbs, and salt, and squeeze a small about of the lemon juice onto each piece before slicing the lemon into 3 and laying onto each fillet.

  4. Bake uncovered for 15-20 minutes then remove and serve. You can squeeze extra lemon juice onto the slices if you want it extra lemony!
