Kobi Nu Shak (Cabbage Curry)

It has been a while since I've made this, and I honestly forget just how quick and easy it is to conjure up! Cabbage packed with vitamin C, and is known for its ability to improve digestion. It is a primary ingredient in Kimchi which is renowned for its gut healthy benefits. So why not try it as a curry??


This dish is definitely on my top 10 list of curries that my mum used to make us as a child. Due to the bland taste of cabbage, it takes in the flavour of spices to create a wondrous flavour and aroma! You can even pop in some potato if you wish, but I like to keep to just carrots and peas for a lighter meal.


If you're trying to eat healthy, this will be the perfect addition to your weekly menu and only 60 kcal per serving! It can be enjoyed with roti or steamed rice, or even in sandwiches and wraps! Sometimes I even like to make toasties for lunch with this as the filling - it is absolutely divine!

INGREDIENTS. (serves 3):

  • 1 cabbage (white or green leaf) - sliced

  • 1 carrot - sliced

  • 1/2 cup frozen peas

  • 1 tsp rapeseed oil

  • 1/2 tsp mustard seeds

  • 1/4 tsp turmeric

  • 1/2 - 1 tsp salt (start with half and add more if needed)

  • 1/2 tsp coriander cumin powder

  • 1 tbsp minced ginger

  • 1/2 tbsp minced green chilli (omit if you don't want the heat)

  • freshly chopped coriander for garnish


METHOD:

  1. In a large pan, heat the oil on high heat then add in the mustard seeds and cover immediately. Allow these to pop then turn the heat low and carefully add in the ginger and chilli and sizzle for 10 seconds. Toss in the sliced carrots and mix.

  2. Allow the carrot to cook until they begin to soften (about 5 minutes).

  3. Throw in the sliced cabbage and sprinkle on salt, turmeric and coriander cumin powder and mix well. Cover and allow to cook until the cabbage begins to soften (it will become smaller), stirring occasionally.

  4. Once the cabbage has cooked, add in the frozen peas and mix well. Cover again and leave on low heat for a few more minutes to allow them to defrost.

  5. Garnish with freshly chopped coriander if desired and serve.
