Homemade Chicken Burger

If there's one thing I believe, it is that homemade food always tastes better! Instead of eating out or ordering in, try this at home instead! It’s super easy to make the burgers plus you know it is healthy as you know exactly what has gone into it. And once you’ve got that, everyone in your household can customise the fillings for themselves! Or if you need a bit of inspiration, I’ve listed what I put in with mine below.

INGREDIENTS:

For the burger:

  • 500g chicken thigh mince (or breast mince if you prefer)

  • ½ tsp turmeric

  • 1 tsp coriander cumin powder

  • 1 tsp salt

  • 1/3 tsp garam masala

  • ½ tsp red chilli powder

  • 1 tbsp garlic – finely chopped or ground

  • 1 tbsp ginger – finely chopped or ground

  • 1 tbsp green chilli – finely chopped or ground

  • Juice of ¼ lemon

  • 1 heaped tbsp chopped coriander

For the filling:

  • seeded brioche burger buns

  • Baby gem lettuce leaves

  • Salad tomatoes – thinly sliced

  • Sliced cheese -  you can get creative here and use flavoured ones i.e. spicy mexican or black pepper

  • Sauce of your choice - I used mint sauce and spicy jalepeno relish

METHOD:

  1. Place the mince in a large mixing bowl then add in all of the above ingredients into it and mix well to combine.

  2. Preheat the oven to 200 degrees (180 degrees fan) and grease a shallow baking tray. Either using a burger stencil or by rolling handfuls of the mince into balls and flattening, make 6 burgers and place onto the baking tray, ensuring to leave some space between each.

  3. Cook in the oven for 30 minutes, turning half way.

  4. To make the burgers, start with the base of the bun then place a lettuce leaf, followed by the burger, then the sliced cheese, sauces/relish and finally the tomatoes and finish off with the top bun.

Serving suggestion: Serve with homemade sweet potato fries! Just peel and slice up a sweet potato, place in a oven dish and drizzle on some oil and sprinkle on some salt, pepper and dried mixed herbs, mix and place in the oven for 35-45 minutes until they are soft with a slightly crispy outside!
