High Protein Vegan Burgers

You don't have to be vegan to enjoy these delicious burgers! Between restaurants, store bought and homemade, these have got to be top of the list! I used the foundation of my meat burgers and decided to try them out using meat free mince, and they turned out better than expected! The meat free soya mince has a subtle taste of its own which adds to the recipe, and the soft texture makes them easy to mould into burgers and stay together compared to bean burgers.


They're super easy to make and can be enjoyed in burger buns, or even on their own if you're watching your carb intake.


INGREDIENTS (makes 4 burgers):

  • 1 pack (400g) Meatless Farm meat free mince

  • 1/2 large aubergine

  • 1/2 large courgette

  • 1 red onion

  • 1 tbsp minced garlic

  • 3/4 tbsp minced ginger

  • 1/2 tbsp minced green chilli

  • 1 tsp salt

  • 1 tsp coriander cumin powder (optional)

  • 1/2 tsp cayenne pepper

  • 1/4 tsp tumeric


METHOD:

  1. Start by blitzing the aubergine, courgette and onion in a food chopper one at a time to mince until fine.

  2. Add your meat free mince to a large mixing bowl, followed by the minced aubergine, courgette and onion. Add in all other ingredients, then using your hand, mix everything together thoroughly.

  3. Once mixed, cut 4 pieces of cling film and lay out on the worktop. Divide the mixture into 4 equal parts, then take each section and roll into a ball, placing each ball on one end of each piece of cling film.

  4. Fold the cling film over the ball and pat down into a burger shape before wrapping it up. Repeat for all 4 burgers.

  5. If at this point you are going to store them, place in the fridge overnight or in the freezer for up to a month.

  6. To cook, preheat the oven to 200 degrees and cook for 20 minutes until they begin to brown. They do have a softer texture than regular burger and won't create as crispy a coating.

  7. Serve in a burger bun with lettuce, tomato and burger relish/hot sauce. You can even add some grilled halloumi!


TIP: If storing in the freezer, ensure to keep them on a flat surface and try not to stack them on top of each other. As they as soft them will easily flatten.
