Healthy Flatbread Rotis

🚨 I have officially found my new roti alternative!! 🚨
Being Indian means growing up eating rotis (chapatis) almost every day. Although they are healthy, chapati flour is still a little higher in carbs and calories. â €
So I thought I'd try mixing it up a little by taking inspiration from a flatbread recipe and creating these wonderfully soft and chewy 'flatbread rotis' (as I want to call them)!â €
As well as being only 80 calories each, the use of fat free greek yoghurt as the glue gives you that extra dose of protein, and the addition of parsley adds a hint of flavour (and colour!)

INGREDIENTS:â €
1 cup wholemeal flour, plus 1 tbsp for dusting the surface
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp chopped fresh parsley
3/4 cup fat-free Greek yogurtâ €
METHOD:â €
Combine the flour, baking powder, salt, and parsley in a medium mixing bowl, then add 1/4 cup yogurt at a time, mixing until the dough is smooth (you'll need to use your hands for this).â €
Wrap the dough in cling film and leave to rest for 30mins-1 hour.â €
Divide the dough into six equal balls.â €
Heat a large nonstick tawa (skillet) or a griddle over medium-high heat. Using a rolling pin, roll out each dough ball into a round "chapati" until it's about 6 inches in diameter (dust the dough and work surface with flour as needed).⠀
Transfer the chapati to the tawa (skillet) one piece at a time, cooking for 1-2 mins per side, flipping to the second side when you start to see the dough rise. You may need to flip it a couple of times to get the perfect rise without burning it. Repeat with the remaining dough balls. ⠀
Serve immediately or let cool, wrap in two layers of plastic and freeze for up to 3 months. ⠀
