This quick and easy way of having fish and chips will satisfy your Friday night cravings to go to the chip shop! Minus the grease, it tastes just as good and you and indulge without the guilt...
INGREDIENTS (serves 1):
1 cod fillet
1 large sweet potato
75g frozen peas
dried mixed herbs
rapeseed or olive oil
salt
black pepper
1/2 lemon or 1 tbsp lemon juice
RECIPE:
Pre heat the oven to 200 degrees (180 degrees fan oven).
On a baking tray, lay a sheet of foil (shiny side up) then place down your cod. Season it on both sides with lemon juice, dried mixed herbs, salt and black pepper. Leave to one side.
Line a separate baking tray with greaseproof paper or foil. Peel the sweet potato and cut into 1 inch thick fries and place in the tray. Drizzle on some rapeseed or olive oil and then sprinkle on some dried mixed herbs. Mix well until all of the fries are evenly coated.
Place the sweet potato fries in the oven and bake for 40-50 minutes depending on how crispy you want them, ensuring to turn them regularly whilst they cook.
When there's only 15 minutes left for the sweet potatoes, add in your cod to the oven and bake for 15 minutes.
In the meantime, steam or boil the frozen peas as per the packet instructions. Drain and leave them to one side.
Once everything is cooked, serve and enjoy!
