Griddled Aubergine & Halloumi

So simple, and so easy. Yet so so tasty!
Aubergine is one of the most versatile veggies but is filling at the same time. It cooks really quickly so is a great option for those days where you've worked late and just want to whip up something quick for dinner.
For this recipe all you need are 2 main ingredients, a griddle (or frying) pan, and some seasoning. It is literally that simple!
INGREDIENTS:
1 large aubergine
1 pack of halloumi
olive oil
dried coriander
dried oregano
dried parsley
chilli flakes - OPTIONAL
salt
black pepper
corriander and cumin powder (dhania jeera) - OPTIONAL
RECIPE:
Slice the aubergine and halloumi short ways into 1 finger thick slices
In a small bowl, place 2 tbsp of olive oil then sprinkle in some dried coriander, dried oregano, dried parsley, chilli flakes (optional), salt, black pepper and coriander and cumin powder (optional). Mix well with a teaspoon.
Pre-heat the griddle (or frying) pan on the hob on medium heat. Once it is hot, take a slice of aubergine and rub in your seasoned oil on both sides of the slice using either your fingers or a brush, then place the slice on the pan. Repeat this for all of the slices, laying them out in the pan.
Add your halloumi slices into the pan (see below image)
Cook both the aubergine and halloumi slices on both sides until they are fully cooked/grilled - some slices will cook quicker than others so just take them out as and when each slice is done. You can cover them with foil to keep them warm.
Once all slices are cooked, serve in a plate and enjoy! You can eat as many slices of each as you like and save the rest for the next day. If you do, reheat in the microwave for about 1 minute because you don't want them to go soggy, or you can have it cold.
