Flax & Chia Granola Cups

These granola cups are such an amazing idea for enjoying your granola on-the-go! For anyone with a busy lifestyle, but in need of a healthy, nutritious and fuelling breakfast, this is perfect! You can make a few and leave in the fridge to help yourself to when you're heading out the door to catch your train or beat the traffic!
This recipe incorporates superfoods Flax & Chia seeds which boast fantastic health benefits for heart health, blood sugar levels and digestion. They also contain a good amount of protein and omega-3 fats, turning these granola cups into a SUPER nutritious breakfast option!
They're soft and chewy, and best of all you can customise them with whatever topping you like! You can even switch the yoghurt to a flavoured greek style yoghurt to add some extra flavour (the reason I opted for 0% fat greek yoghurt is because it contains the highest amount of protein - so anyone on a high protein diet should stick with this).

INGREDIENTS:
2 bananas
⅓ cup honey (100 g)
1 teaspoon vanilla extract
1 ¼ cups wholegrain oats (125 g)
1/3 cup milled flax and chia mix (I used Bioglan Superfoods)
1 teaspoon cinnamon
1 pinch salt
210g 0% fat greek yoghurt (1 tbsp per granola cup)
Suggested toppings:
strawberries
blueberries
chia seeds
METHOD:
Mash two bananas in a small bowl.
Add the honey and vailla extract. Mix well and set aside.
Mix the wholegrain oats, flax & chia, cinnamon, and a pinch of salt in a large bowl, then add the banana mixture to it. Mix well until fully combined.
Grease a muffin tin tray then divide the mixture equally into each section, pressing down on the middle and sides to form the cup. Refrigerate 1-2 hours.
Bake for 10-12 minutes at 180°C fan.
Leave to cool for 10-20 minutes.
Top with a tablespoon of yogurt, blueberries, strawberries and a light sprinkle of chia seeds.
