Feta & Olive Salad

This is such a simple, healthy, low calorie solution for when you're looking for something light to eat! Now that I am back to work in the office I need some more cold lunchbox solutions since we can't really be using the microwave etc right now... Plus, since I'll be sat most of the day I need something super light on the carbs but filling enough to not make my tummy cry 2 hours later!
I love feta cheese in salads, it adds a delicious tangy flavour! Plus olives are obviously the perfect match to go with them! I would usually dress this in some oil but I wanted to keep the fat content down so just opted for some light seasoning. This is honestly the simplest of simple dishes and that's what makes it so perfect for a quick lunch throw-together!

INGREDIENTS:
60g bistro salad (you can get these ready made bags in any supermarket)
1/4 cucumber
3 baby plum tomatoes
1/2 carrot (grated)
30g pitted green olives
30g feta cheese
to season:
salt
black pepper
chilli flakes
half lemon
METHOD:
Wash and cut the cucumber and plum tomatoes and peel and grate the carrot.
In a plate, lay down the bistro salad then follow with the cucumber, tomatoes and carrot. Then add the olives and finally crumble on the feta cheese.
Season with salt, pepper chilli flakes (the chilli flakes are optional!), and some lemon juice (this is also optional).
