Chocolate Protein Cookie Bites

Fancy something sweet without the guilt of scoffing them all in one sitting? Then try out these little cookie bites!


Only 105 calories per ball!

NO FLOUR

They have a beautifully soft cookie texture and are super easy to make and done in just 5 minutes... So you can spend less time watching them cook and more time eating them!


INGREDIENTS (makes 8 balls):

  • 60g smooth peanut butter

  • 30g chocolate protein powder

  • 30g ground almonds

  • 1 tsp vanilla extract

  • 1/4 tsp bicarbonate of soda

  • 1 egg

  • 25g slab of dark chocolate (I used 85%) / or dark chocolate chips


METHOD:

  1. Preheat the oven to 180 degrees and line a baking tray with baking parchment.

  2. In a mixing bowl, add in all of your ingredients except the chocolate and beat with a wooden spoon until smooth.

  3. If you're using a slab of dark chocolate, cut these into small squares about the size of chocolate chips.

  4. Mix in the chocolate chips.

  5. Use your hands to lightly roll balls about the size of a ping pong ball and place on the baking tray leaving approx. 5cm between each ball.

  6. Place in the oven for 5 minutes, then remove and leave to cool for at least 20 minutes. (You can indulge in them earlier if you don't mind some oozy gooey chocolate).
