Chipolatas, Eggs & Beans

If there's one thing I love every once in a while, it is sausages! As much as I enjoy having them with some potato mash and gravy, they're also delicious for breakfast when you need something a bit more heavier and filling. My absolute favourite combination is definitely this: sausages, scrambled eggs and baked beans!


This meal is high in protein with a good amount of carbs and fat too, and the fat is all natural. Although, I wouldn't make a habit of eating sausages regularly as they are quite high in fat in comparison to everything else. That is why I always opt for chipolata sausages. They are prepared relatively thinner than normal sausages and therefore carry half the amount of calories between two. They are known for being part of Christmas dinner as pigs in blankets, but they are just as good for breakfast too at any time of the year!


You can also probably tell the eggs are not your ordinary scrambled eggs. I love to add a little turmeric to mine because not only does it give them a lovely yellow colour, it has many proven healthy benefits too, so I like to incorporate it into whatever I can. But don't worry, you cannot taste it at all!


INGREDIENTS:

  • 2 chipolata sausages

  • 1 egg - beaten

  • 1 tbsp milk

  • pinch of turmeric

  • pinch of salt

  • 100g baked beans

  • 1/2 tsp coconut oil

To serve:

  • salt

  • black pepper

  • chilli flakes (optional)


METHOD:

  1. Cook the sausages in the oven as per the packet instructions.

  2. When there is about 5 minutes left on the sausages, start making your egg. To do this, heat the oil in a frying pan and sprinkle in the turmeric and salt into the beaten egg and whisk until mixed. Then add in the milk and whisk again. Once the pan is hot, Pout the egg mixture into the pan and keep on medium-high heat. Once the egg begins to cook a little after about 30-40 secs, use a wooden spoon to scramble.

  3. Remove from heat and place in the centre of your plate. Top with a few chilli flakes if desired.

  4. Heat the baked beans in the microwave for about 40 secs and remove the sausages from the oven. Pour the baked beads around the scrambled egg pile and top with the 2 sausages.

  5. Serve with a sprinkle of salt and black pepper.
