Chilli "Chicken" (VEGAN)

I'm not really sure what to call this dish, but I can tell you it is THE BEST THING TO EVER GRACE YOUR VEGAN PALETTE!


I decided to try out Sainsbury's Plant Pioneers Chicken Style Pieces to create a spicy starter style dish to warm up your taste buds! They are similar to tofu but with a slight chicken like shred as your break into them - literally one of the best textures I've come across for vegan alternatives!


When I tucked into this it reminded me a little of chilli paneer - with the combination of spices, and look and taste of the chicken style pieces - it is deffo one to add to your starters list for dinner parties.



INGREDIENTS:

  • 300g sainsburys plant pioneers chicken style pieces

  • 1 medium sweet potato (cubed into small pieces)

  • 1/2 courgette (cubed into small pieces)

  • 3 tbsp passata

  • 1/2 red onion (minced/finely chopped)

  • 1 tbsp minced garlic

  • 1/2 tbsp minced ginger

  • 1/2 tbsp minced green chilli

  • 1 tsp salt

  • 1 tsp coriander cumin powder

  • 1/4 tsp turmeric

  • 1/4 tsp garam masala (optional for extra heat)

  • 1 tsp rapeseed oil

  • Freshly chopped coriander for garnish


METHOD:

  1. Heat the oil in a wok style pan on high heat. Lower heat to medium and add the onion. Sautee for 5 minutes then sizzle in garlic, ginger and chilli.

  2. Add the chicken style pieces, sweet potato and courgette. Sprinkle on salt, coriander cumin powder and turmeric, then mix well.

  3. Cover and leave on low heat until the chicken style pieces are cooked through thoroughly and the sweet potatoes have softened - stirring occasionally to avoid sticking.

  4. Once everything is cooked, add in the passata and garam masala (if using), mixing well.

  5. Cover again and allow to simmer for 5-10 minutes.

  6. Garnish with coriander and serve.
