Bruschetta Al Pomodoro (& Guacamole!)

One starter people love to order at an italian restaurant is always Bruschetta. There's something about the taste of ciabatta bread with fresh tomato topping that just tastes so delicious! But there's also another combination that people love - tomato salsa and guacamole! So I decided to merge the two to create this mouth watering version of Bruschetta topped with guacamole and tomato salsa. All homemade! (apart from the bread...)
INGREDIENTS:
Ciabatta bread loaf
For the guacamole
1 large ripened avocado
Salt to taste
Pepper to taste
1 lemon
1 small red onion - finely chopped
For the tomato salsa
1 large tomato
Fresh chives - chopped
Fresh coriander - chopped
Dried mixed herbs
RECIPE:
To make the guacamole, slice the avocado in half an remove the seed. Scoop out into a bowl with a table spoon, then start to mash the avocado using the back of the spoon (you can also use a pestel and mortar if you have one). Mix in a couple of tablespoons of the finely chopped red onion (depending on how much onion you'd like in there), then sprinkle in a pinch of salt, pepper and about a tablespoon of lemon juice - keep tasting and adding as you go along until you have your perfect taste. Leave to one side or in the fridge if you'll be making the bruschetta later.
To make the tomato salsa, dice the tomato into small cubes, ensuring to try and keep the juices. Place in a bowl them add a pinch of salt, some mixed dried herb, fresh coriander and chives. Mix well but gently.
Preheat your oven grill to gas mark 5. Slice your ciabatta loaf in 1-2 finger thick slices and place on an oven tray. Grill each side for a minute or two until the slices become crispy and lightly golden.
Remove the slices from the grill and leave to cool for a minute, then top each of them with a spoonful of guacamole followed by a spoonful of the tomato salsa. Top with additional fresh coriander and chives as well as black pepper if you wish.
So simple yet so delicious! Hope you enjoy!
