Banana Oat Protein Cookies

Using only 4 super simple ingredients for the base and a tasty combo of flavours, these bad boys are down right delicious and bursting with goodness!
Best of all, they're done in under 30mins so you can whip them up for a yummy post workout treat or a guilt-free indulgent snack anytime for the day.
INGREDIENTS (makes 12):
2 large very ripe bananas
1 scoop chocolate or vanilla protein powder
80g wholegrain oats
Pinch of salt
2 tbsp raisins
2 tbsp dessicated coconut
For the chocolate drizzle:
2 tbsp melted coconut oil
2 tbsp raw cacao powder
1 tbsp coconut sugar
Pinch of salt
METHOD:
Pre heat oven to 180⁰C and line a baking tray with greaseproof paper.
Peel bananas and add to a mixing bowl. Mash with a fork until smooth as possible.
Mix in protein powder until fully combined then stir in the oats.
Stir in the raisins and dessicated coconut.
Spoon approx 1 tbsp of mixture onto the baking tray and repeat to make approx 12 cookies. Flatten slightly with the back of the spoon to shape into nice circles. Bake for 10-12mins.
Remove from oven and allow to cool whilst you make the chocolate drizzle - just mix the ingredients together (do over a bowl/pan of boiling water if you need to). Place in the fridge for 5 mins so it's not too runny.
Drizzle the chocolate over the cookies using a fork and enjoy!
